Originally I always steered clear of landscape iPhone/iPod Touch themes because I thought if the iPhone was made to be portrait, I would keep it like that but this theme is making me seriously reconsider.
This theme iNitsua and is by k.nitsua. It is in beta.

This is my first theme and is only a beta. The final version will have a complete UI overhaul. This version currently only has a springboard theme.
Why use this theme?
This theme was designed for simplicity in navigation and landscape interface. Having used many summer/winterboards, I’ve had many ideas of how a theme should be. When Reeco came out with iNAV, it really opened the door for a truly unique iPhone experience.This theme addresses issues I’ve had with themes in the past – minimal and clean interface, better organization, issues with forced “categories”.
This theme allows the user to have 3 “favorite” apps on the main page, then another page that has 9 more “favorites” (which loads quickly since its just another page), then a link to the category folder containing the remaining apps.
For instance, here is the “Games” page which contains 3 “favorite” games:
When you click on the main icon (the iPhone in the middle), it takes you to this page:
Which also contains a link on the right of the 9 other “favorites” to the “More Games” category that contains the remaining games.

I have detailed instructions in the “How To Setup” folder. This includes a txt readme file as well as images to help arrange the icons. Here is an example of one of those direction images:
